Chefs Bas Copraij and Bas Scholten prepare a five-course surprise menu inspired by everything under the sun. Dishes might include starter of Indonesian chicken soup with rice, parsley, chillies and foam of lemongrass, main course of crispy guinea fowl and green asparagus with croquette filled with pecorino cheese, and dessert of lukewarm pineapple with gin-tonic granite.
