Sit back and enjoy a show that plays with textures, temperatures and notions of ‘normal’ cuisine, while remaining grounded in season and flavour. Recent Alinea menu stunners have included squab with peppercorn custard, sorrel and strawberries; cocoa-coated watermelon with cubed Kobe beef; and a parfait of porcini purée, almond ice-cream and powdered ham.
