Madrid has drawn in waves of immigrants over the centuries and this is reflected in its cooking. Recent arrivals from Mexico, India, Italy and the Middle East have given the city a cosmopolitan range of restaurants unrivalled by most Spanish cities. Yet Los Austrias and La Latina remain bastions of tapas and tradition; the weekend still wouldn't be the weekend for most locals without cocido madrilèno – a stew of offal, meat and vegetables.
